State Line American Gin Pickled Onions

Recipe by Distiller Elista Fisher

1 Red Onion
1/2 cup Water
1/2 cup State Line American Gin
1/2 cup Distilled White Vinegar or Apple Cider Vinegar
1 1/2 tbsp Maple Syrup or honey
1 tbsp Salt
1 tbsp Red Pepper Flakes (optional)
1 1/2 tbsp Maple Syrup

Tools: Mason Jar or other 8oz heat-safe container, knife for chopping, saucepan

Directions: Thinly slice & pack red onion into your mason jar or other heat-safe container. In a saucepan, combine water, vinegar, maple syrup or honey, salt, and red pepper flakes (optional). Heat over medium until a soft simmer forms, stirring frequently. Remove mixture from heat and pour into mason jar so onions are completely submerged. Place jar in the refrigerator to cool overnight. Next morning, pour out half of the vinegar liquid out, and top off with State Line American Gin until onions are fully submerged.

Keeps for 2-3 weeks in fridge. Our botanicals complement the pickled onions marvelously.

Pro-Tip: You can also use the gin/vinegar mix in Bloody Mary's or salad dressings.
